Recipe Club: Honey Ginger Shrimp

Today I am linking up with Andrea for her Recipe Club!

Let me just start by saying that it is VERY rare that I make something that both of my kiddos and my hubby all like.  I know, I know...I am not a short order cook and shouldn't make 3 or 4 different things every night, but after a long day at work, this mama is tired and just wants to make everyone happy!  But, when I do find a recipe that everyone eats, you can imagine my excitement!

Honey Ginger Shrimp is our absolute favorite recipe!

  • 1/2 cup EVOO
  • 1/4 cup honey
  • 1 tsp. red pepper flakes
  • 1 tsp. chopped garlic
  • 1/4 yellow onion, chopped
  • 2 Tbsp. ground ginger (I add a little more if needed)
  • 1 pound medium shrimp, peeled and deveined
  • salt and pepper to taste
 I serve over angel hair or spaghetti noodles.
Cook pasta according to box and set aside. Heat the olive oil and red pepper flakes in a large skillet over medium heat. Add the onions, garlic, ginger and honey; cook and stir until fragrant. Add the shrimp, and cook for 5 minutes, stirring as needed, until shrimp are pink and opaque. Serve immediately.  (Makes 4 servings) 
I usually serve with a salad and bread.

Y'all, I seriously cannot even tell you how good this stuff is!  Just try it for yourself and thank me later ;)
